Things it has improved

None of these are difficult. That is rather the point. A good sauce does the work so the cook can take the credit.

Breakfast · 10 minutes · Serves 1, defensibly

Eggs, the morning after

Two eggs, a hot pan, and a sauce that has already done its thinking. Eat directly from the pan if nobody is observing.

You will need

  • 2 eggs
  • A knob of butter
  • 1 thick slice of sourdough
  • 1 tbsp 10 Pepper Party, then more

Then

  1. Toast the bread. Butter it while it is still slightly too hot to hold.
  2. Fry the eggs in the rest of the butter until the edges go lacy and brown.
  3. Eggs onto toast. Sauce over everything, from a reasonable height.
  4. Disregard your responsibilities for the next eight minutes.

Condiment for a condiment · 1 minute · Serves a table

Party mayonnaise

Mayonnaise accepts it willingly. Use on chips, sandwiches, and anything breaded that has come out of the fryer.

You will need

  • 4 tbsp good mayonnaise
  • 1½ tbsp 10 Pepper Party
  • A squeeze of lemon
  • Salt, if asked

Then

  1. Stir everything together in a small bowl.
  2. Taste. Add more sauce. This step is not optional.
  3. Keeps in the fridge for three days, though it has never been tested that long.

Dinner · 40 minutes, plus a night · Serves 4

Overnight chicken thighs

As a marinade it gets into the meat and stays there, which is more than most guests manage.

You will need

  • 8 bone-in chicken thighs
  • 5 tbsp 10 Pepper Party
  • 2 tbsp olive oil
  • 3 cloves garlic, crushed
  • 1 tsp salt

Then

  1. Mix the sauce, oil, garlic and salt. Turn the thighs through it and refrigerate overnight.
  2. Oven to 220°C. Thighs skin-side up on a tray, marinade scraped over the top.
  3. Roast 35–40 minutes, until the skin is dark at the edges and the juices run clear.
  4. Rest five minutes. One more spoon of sauce on each before it reaches the table.

Lunch · 8 minutes · Serves 1–2

Beans, promoted

A tin of beans is a necessity. With this it becomes a decision.

You will need

  • 1 tin of beans in tomato sauce
  • 1 tbsp butter
  • 1–2 tbsp 10 Pepper Party
  • Grated cheddar
  • Toast

Then

  1. Warm the beans gently with the butter.
  2. Stir the sauce through just before they come off the heat.
  3. Onto toast, under the cheese, under the grill until it bubbles.

Seafood · 6 minutes · Serves 2

Prawns in a hurry

Hot pan, cold prawns, very little standing around.

You will need

  • 300g raw peeled prawns
  • 40g butter
  • 2 cloves garlic, sliced
  • 2 tbsp 10 Pepper Party
  • Parsley, bread for the pan

Then

  1. Melt the butter until it foams. Garlic in for thirty seconds.
  2. Prawns in. Turn once, when they go pink on the underside.
  3. Off the heat, sauce in, swirl until glossy. Parsley.
  4. Bread for the pan. The pan is the point.

Side · 1 hour · Serves 4, or 2 honestly

Roast potatoes, finished

Roast them as you always have. This is only the ending.

You will need

  • 1kg floury potatoes
  • 4 tbsp oil or dripping
  • 2 tbsp 10 Pepper Party
  • Flaky salt

Then

  1. Parboil, rough up in the colander, roast at 220°C until properly crisp.
  2. In the last five minutes, toss them through the sauce on the tray and return to the oven.
  3. Salt. Serve before anyone can claim the corner pieces.
